How to spatchcock a chicken step-by-step guide

Using a pair of sharp kitchen scissors, cut out the chicken's backbone by making an incision either side of it. Discard or use later for stock.
step 2
Now that the chicken is backbone-free, you can spread it out on your work top surface (cut-side down). Push down the chicken carcass so that it's as flat as possible.
