Simposio

Just 20 minutes from Valencia city, Simposio is the vision of chef Roger Julián. Set in the tranquil village of San Antonio de Benagéber, it offers intimate, contemporary dining embedded in the local area.

Centred around an open kitchen, the dining experience invites you to engage with the chef and learn about the dish beyond the plate. The four tasting menus push boundaries yet nod to tradition, while using every ingredient to its full potential.

Standout dishes include the texturas de rábano blanco y sandía, with its refreshing balance of white radish and watermelon, and corzo y remolacha, which pairs rich venison with earthy beetroot for an unforgettable flavour.

Rubén Miralles

Located in the coastal town of Vinaròs, Rubén Miralles has also joined the prestigious Michelin club. Tucked away along a narrow street just metres from the Plaza Parroquial, this small restaurant provides the ideal setting for chef Rubén Miralles’ modern cuisine.

Miralles’ cooking combines the latest techniques with top-quality local ingredients. You can choose from four menus: Debé (lunchtime, midweek), Producte (a seasonal option showcasing local market gardens and the sea), Amarant (a vegan tasting menu) and Rubén Miralles (the most gastronomic experience).

Through these menus, Miralles explores both local and global flavours, with subtle references to the cuisines of Arabia, Peru and Asia. From fresh fish and seafood to meat and vegetables, the restaurant prioritises locally sourced produce and sustainable practices, earning recognition from the Sustainable Guide for its efforts.

Llavor

Also in Castellón, Llavor – meaning “seed” in Valencian – embodies the region’s new culinary energy. Led by chefs Jorge Lengua and Adrián Peralta, this Michelin-starred restaurant is located in the upper section of the Oropesa del Mar residential district.

Boasting a large terrace and stunning views of the Mediterranean Sea and neighbouring towns and villages, this stylish spot offers two tasting menus – Flores de Colores and Nubes de Mariposas – that take you on a seasonal journey through the region using high-quality local produce.

The experience often begins with creative appetisers on the terrace, followed by elegantly presented dishes that showcase the chefs’ careful research into regional vegetables, meats and seafood. One highlight is the grilled squid with pork jowl and Caseta d'Espadà cheese, which perfectly encapsulates Llavor’s philosophy of blending tradition with innovation.
