Vegan eggnog

Ingredients
- 700ml almond milk
- 200ml coconut cream
- a small pinch of each ground nutmeg, cinnamon and cloves, plus extra cinnamon to serve
- 50g cashew nuts
- 50g pitted dates
- a couple of glugs bourbon, rum or amaretto, (optional)
- vegan whipped cream, to serve
- cinnamon sticks, to serve
Method
- STEP 1
Tip the almond milk, coconut cream, spices, cashew nuts, dates and alcohol (if using) into a blender and blitz until completely smooth and creamy.
- STEP 2
Pour the eggnog into mugs or tumblers, then top with vegan whipped cream, dust with cinnamon and garnish with a cinnamon stick to serve.
