Light chicken Caesar

Enjoy creamy Caesar salad without the guilt. This light version uses half-fat crème fraîche, Worcestershire sauce and Dijon mustard for an extra kick.

Ingredients

  • ciabatta 2 slices, cut into chunks
  • olive oil
  • salt flakes
  • half-fat crème fraîche 4 tbsp
  • Dijon mustard 1 tsp
  • Worcestershire sauce ½ tsp
  • garlic ½ clove, crushed
  • parmesan 30g, finely grated plus a few shavings
  • lemon ½, juiced
  • cooked skinless chicken breast 1, sliced
  • little gem lettuce 2, leaves separated and torn if large
  • spring onions 2, shredded

Method

  • Step 1

    Heat the oven to 200c/fan 180c/gas 6. Toss the bread with 1 tbsp olive oil and some salt flakes. Bake for 10-15 minutes until golden.

  • Step 2

    Mix the crème fraîche, dijon, worcestershire sauce, garlic and parmesan with a squeeze of lemon juice and a splash of water. Season.

  • Step 3

    Toss the lettuce with ½ the dressing and divide between 2 plates. Top with chicken, croutons and spring onions. Drizzle over the rest of the dressing. Shave over a little parmesan to finish.
