- 2 slices ciabattacut into chunks
- olive oil
- salt flakes
- 4 tbsp half-fat crème fraîche
- 1 tsp Dijon mustard
- ½ tsp Worcestershire sauce
DRESSING
- ½ clove garliccrushed
- 30g parmesanfinely grated plus a few shavings
- ½ lemonjuiced
- 1 cooked skinless chicken breastsliced
- 2 little gem lettuceleaves separated and torn if large
- 2 spring onionsshredded

Method
step 1
Heat the oven to 200c/fan 180c/gas 6. Toss the bread with 1 tbsp olive oil and some salt flakes. Bake for 10-15 minutes until golden.
step 2
Mix the crème fraîche, dijon, worcestershire sauce, garlic and parmesan with a squeeze of lemon juice and a splash of water. Season.
step 3
Toss the lettuce with ½ the dressing and divide between 2 plates. Top with chicken, croutons and spring onions. Drizzle over the rest of the dressing. Shave over a little parmesan to finish.
