This recipe uses tuna, spring onion, celery and sour cream to create a delicious baked jacket potato. Really easy to make and perfect for when you're short on time

Ingredients

  • baked potatoes 2
  • tuna a tin
  • spring onions 2, chopped
  • celery 1 stalk, diced
  • mayo 2 tbsp
  • soured cream 1 tbsp
  • lemon

Method

  • Step 1

    For a perfect jacket, prick all over, rub with olive oil and bake in a 200C/fan 180C/gas 6 oven for 1-1¼ hours.

  • Step 2

    Mix the drained tuna with the chopped spring onions, celery, mayo and soured cream.

  • Step 3

    Mix in the zest and juice of half a lemon, season and divide between 2 baked spuds.
