Ingredients

  • 2 shredded
  • 100g (the baked croutons, healthy variety)
  • 2 beefsteak tomatoes, cut into large pieces
  • 1 celery heart, chopped
  • 100g roasted red peppers, chopped
  • 1 small red onion, halved and sliced into half-moons
  • 10 olives, or capers 1 tbsp
  • small bunch basil, leaves only
  • 3 tbsp red wine vinegar
  • extra-virgin olive oil

Method

  • STEP 1

    Mix the chicken, croutons, tomatoes, celery, roasted peppers, red onion, olives or capers, and basil in a large bowl and season. Just before eating, drizzle over the vinegar and 3 tbsp oil and toss.
