A quick midweek meal for four. Bursting with Mediterranean flavours this vibrant deli-style chicken salad is easy to make and ready in just 20 minutes.

  • 2, shredded
  • croutons 100g (the baked, healthy variety)
  • beefsteak tomatoes 2, cut into large pieces
  • celery heart 1, chopped
  • roasted red peppers 100g, chopped
  • red onion 1 small, halved and sliced into half-moons
  • olives 10, or capers 1 tbsp
  • basil small bunch, leaves only
  • red wine vinegar 3 tbsp
  • extra-virgin olive oil


  • Step 1

    Mix the chicken, croutons, tomatoes, celery, roasted peppers, red onion, olives or capers, and basil in a large bowl and season. Just before eating, drizzle over the vinegar and 3 tbsp oil and toss.
