Ingredients
- caster sugar 2 tsp
- bourbon 60ml
- lemon juice 25ml
- pineapple juice 25ml
- egg white 1
- pineapple wedge to garnish (optional)

Put the sugar, bourbon, lemon juice, pineapple juice and egg white into a cocktail shaker filled with ice and shake vigorously for 15-30 seconds, Strain into an old fashioned cocktail glass and serve.
