Tex-mex melt baked potato

This easy recipe combines avocado, baby plum tomatoes and jalapeños with melted mozzarella and cheddar for a really delicious baked jacket potato. We like ours with extra melted cheese!

Ingredients

  • baked potatoes 2
  • cheddar 50g, grated
  • mozzarella 50g
  • baby plum tomatoes 8, diced
  • jalapeños chopped to make 1 tbsp
  • avocado 1/2, diced
  • red onion 1/2, finely chopped
  • coriander chopped to make 1 tbsp
  • lime 1

Method

  • Step 1

    For a perfect jacket, prick all over, rub with olive oil and bake in a 200C/fan 180C/gas 6 oven for 1-1¼ hours.

  • Step 2

    Divide the grated cheddar and mozzarella between 2 split baked spuds then put back in the oven until melted.

  • Step 3

    Meanwhile, mix the baby plum tomatoesjalapeños, diced avocado, red onion and coriander with a squeeze of lime juice and season.

  • Step 4

    Pile on top of the melted cheese.
