Ingredients
PEANUT BUTTER AND DATE BITES
- crunchy peanut butter 5 tbsp
- porridge oats 6 tbsp
- dates 2 tbsp, finely chopped
- chia seeds 1 tsp
COCONUT AND APRICOT BITES
- coconut butter 1½ tbsp
- apricots 3 tbsp, finely chopped
- desiccated coconut 2 tbsp + more for rolling
- porridge oats 3 tbsp
PISTACHIO AND GOJI BERRY BITES
- pistachio kernels 3 tbsp, chopped
- goji berries 3 tbsp, roughly chopped
- sunflower seeds 2 tbsp
- maple syrup 2 tbsp
- milled flaxseed 3 tbsp

Step 1
Put all the ingredients for whichever bite you are making in a small blender and pulse until well combined. Take out tsps of the mix, and roll into balls. Dust in desiccated coconut (if using), or sesame seeds if you like, before chilling.
