Peppadew, black bean and avo tortilla pizzas

This healthier version of a pizza is really simple but tastes delicious. Mix and match with fresh toppings and sprinkle some extra cheddar or mozzarella for a really cheesy snack

Most supermarkets sell a cheddar/mozzarella mix which is great for pizzas and toasties.

Ingredients

  • grated cheddar and mozzarella 125g
  • red onion 1/2, finely sliced
  • tortillas 4
  • avocado 1, halved and sliced
  • black beans 1/2 tin, drained
  • rocket a handful
  • olive oil 2 tbsp
  • lime juice 1 tbsp
  • Peppadew peppers 6, chopped

Method

  • Step 1

    Heat the oven to 200C/fan 180C/gas 6. Divide the cheese and onion between the tortillas. Put on a baking sheet and bake until the cheese is melted, about 5 minutes. Add some avocado and scatter the beans and rocket onto each tortilla. Mix together the olive oil, lime juice and chopped peppers and drizzle over each.
