New potato deli salad

This classic new potato deli salad is super simple to make. Under 500 calories this recipe is a great healthy midweek meal

Ingredients

  • Charlotte potatoes 300g
  • pastrami 100g, torn into pieces
  • watercress 2 handfuls
  • chives 1 tbsp, chopped

Dressing

  • mayonnaise 2 tbsp
  • horseradish cream 2 tbsp
  • shallots 2, finely chopped
  • gherkins 2 tbsp, chopped

Method

  • Step 1

    Mix the mayo, horseradish, shallots and gherkins with 1 tsp of brine from the gherkin jar in a large bowl and season well.

  • Step 2

    Cook the potatoes in boiling salted water until tender. Drain and leave to cool for 5 minutes then cut in half lengthways and add to the dressing bowl with the pastrami.

  • Step 3

    Toss to coat then pile onto watercress and sprinkle over the chives.
