Try our black cherry granita, it's a perfect summer palate cleanser. This recipe is super quick and easy to make, and it's great for a big crowd

Ingredients

  • black cherries 300g very ripe, pitted
  • caster sugar 100g, plus extra to taste
  • cherry brandy 1-2 tbsp, optional

Method

  • Step 1

    Put the cherries into a large pan with 300ml water and the sugar.

  • Step 2

    Cook gently for 10-15 minutes until the cherries have softened completely.

  • Step 3

    Whizz in a food processor or blender, then push through a sieve (taste and add a little more sugar if needed).

  • Step 4

    Stir in the cherry brandy, if using. Pour into a large baking dish and freeze for an hour.

  • Step 5

    Use a fork to scrape the frozen edges into the middle then freeze again.

  • Step 6

    Repeat 2 or 3 times at hourly intervals until the granita has set. Serve in small glasses.
