  • for frying olive oil
  • 2 round shallots
    sliced
  • 1 clove garlic
    crushed
  • 150g chestnut mushrooms
    finely sliced
  • 200g baby spinach
    chopped
  • 2 tsp English mustard
  • 3 tbsp crème fraîche
  • 2 gammon steaks
  • 2 eggs

Method

  • step 1

    Heat 1 tbsp of olive oil in a frying pan and cook the shallots for 3-4 minutes or until soft. Add the garlic and cook for 1 minute, then add the mushrooms and cook for 8-10 minutes or until golden and most of their liquid has evaporated. Stir in the spinach and cook until just wilted, then stir in the mustard and crème fraîche, and bubble everything together.

    Brush the gammon steaks with oil then season. Heat a griddle pan over a high heat and cook for 2-3 minutes on each side or until cooked through.

  • step 3

    Fry the eggs in a little oil in a separate frying pan.

  • step 4

    Spoon the spinach and mushrooms onto plates and top with the gammon and a fried egg.
