Prawn, watermelon and feta salad

It seems an unlikely combination, but this prawn, watermelon and feta salad really works. It's an unusual combination but a delicious one, the sweetness of the watermelon and prawns off-set by the salty feta.

Ingredients

  • large raw shelled prawns 400g, butterflied
  • green beans 250g, trimmed
  • watermelon 850g chunk
  • mint a small bunch, leaves picked
  • feta 200g pack
  • flatbread or pitta bread to serve
  • olive oil 2 tbsp
  • lemons 2, juiced
  • chilli flakes 1 tsp

Method

    Mix the dressing ingredients with a little salt and pepper, then sprinkle 1 tbsp of it over the prawns, toss together and leave to marinate for 15 minutes.

    Bring a pan of salted water to the boil, throw in the green beans and cook for about 2-3 minutes, or until just tender. Drain, then plunge into ice-cold water to cool the beans completely before draining again. Pat dry with kitchen towel.

    Cut away the skin and white flesh of the watermelon then cut into cubes. Put in a bowl with the green beans, then roughly tear in the mint leaves and crumble over the feta.

    Heat a frying pan or griddle until really hot, and fry the prawns in batches until they turn pink. Add the prawns to the rest of the salad ingredients, drizzle over the remaining dressing and very gently toss together before serving with warm flatbreads or toasted pitta.
