Ingredients
- 4 slices ciabatta, cut into chunks
- olive oil
- 1 jar (approx 280g) artichoke hearts, drained
- 10 black olives, halved
- 3 large from a jar roasted red peppers, cut into pieces
- 1 tbsp red wine vinegar
- 2 handfuls rocket
Method
- STEP 1
Toss the ciabatta with 2 tsp olive oil and bake in a 190C/fan 170C/gas 5 oven until golden.
- STEP 2
Put the artichokes, olives and peppers in a large bowl. Whisk the red wine vinegar with 2 tbsp olive oil and season. Add to the bowl and toss everything, then add the croutons and rocket and toss again. Pile onto plates and serve.
