Cannellini, chilli and lemon bruschetta

Lunch with friends has never been so laid back, this colourful dish is ready in just 25 minutes. Make the bean mixture and bruschetta ahead then assemble just before serving.

Ingredients

  • cannellini beans 400g tin, drained and rinsed
  • spring onions 2, finely chopped
  • red chilli 1, finely chopped
  • lemon ½, juiced
  • garlic ½ clove, crushed
  • parmesan grated to make 4 tbsp
  • flat-leaf parsley ½ small bunch, roughly chopped
  • olive oil
  • ciabatta 8-12 slices

Method

  • Step 1

    Mix together the beans, spring onions, chilli, lemon juice, garlic, parmesan and parsley with a good slug of olive oil.

    Season. Drizzle the ciabatta slices with oil and grill or bake till crisp and golden.

    Top with the bean mix. Drizzle with extra oil and serve.
