Make this white bean bruschetta for a casual summer lunch, then also try our classic bruschetta recipe.

Ingredients

  • 400g tin cannellini beans, drained and rinsed
  • 2 spring onions, finely chopped
  • 1 red chilli, finely chopped
  • ½ lemon, juiced
  • ½ clove garlic, crushed
  • grated to make 4 tbsp parmesan
  • ½ small bunch flat-leaf parsley, roughly chopped
  • olive oil
  • 8-12 slices ciabatta

Method

  • STEP 1

    Mix together the beans, spring onions, chilli, lemon juice, garlic, parmesan and parsley with a good slug of olive oil.
    Season. Drizzle the ciabatta slices with oil and grill or bake till crisp and golden.
    Top with the bean mix. Drizzle with extra oil and serve.
