Pork, chilli and bean stew

This spicy stew combines pork with chopped tomatoes, green beans, red peppers and tomatoes: ideal to warm your bones when the wind is whistling outside.

  • olive oil
  • diced pork 400g
  • red onion 1, halved and sliced
  • garlic 2 cloves, sliced
  • chilli flakes a large pinch
  • ground cumin 1 tsp
  • red pepper 1, cut into chunks
  • chopped tomatoes 400g tin
  • chicken stock 400ml
  • small salad potatoes 250g, halved
  • green beans 100g
  • coriander ½ a bunch, chopped


  • Step 1

    Heat 1 tbsp olive oil in a large non-stick pan. Season the pork then quickly brown all over. Scoop out then add the onion and garlic and cook for a minute.

    Add the chilli flakes, cumin and pepper and cook for 2 more minutes. Add back the pork with the tinned tomatoes and chicken stock.

    Bring to a simmer and add the potatoes. Cook for 10-15 minutes then add the beans and cook for another 5 minutes. Season and scatter over the coriander to finish.
