Seeds and shoots salad

This recipe for seeds and shoots salad is a great one to have on hand for lunch. It's full of interesting flavours and textures, is ready in just 15 minutes and comes in at under 300 calories.



  • olive oil
  • lemon ½, juiced
  • red wine vinegar 1 tbsp
  • Dijon mustard 1 tsp
  • lentil, pea and bean shoots 25g (look for the Good4u range at Tesco and Sainsbury’s)
  • red onion ¼, thinly sliced
  • tomatoes 2, seeded and diced
  • cucumber ½, diced
  • rocket 50g
  • pumpkin seeds 1 tbsp, toasted


  • Step 1

    Whisk 1 tsp oil, lemon, vinegar and mustard together and season. Pour into a small jam jar or container. Toss the lentil, pea and bean shoots, onion, tomato and cucumber with the rocket and scatter with pumpkin seeds. Dress the salad just before eating.
