This penne with gorgonzola, walnuts and spinach is a fresh and super-fast meal to help get you through the week.

Ingredients

  • penne 150g
  • spinach 100g, roughly chopped
  • gorgonzola 100g, crumbled
  • single or cream 4 tbsp
  • walnut or halves a handful, toasted and roughly chopped

Method

  • Step 1

    Cook the penne following the pack instructions. Put the spinach in a colander and pour the pasta and cooking water over to wilt the spinach. Leave to drain.

  • Step 2

    Mix the cheese, cream and walnuts with salt and lots of pepper then stir through the hot pasta and spinach.
