Make this classic celeriac

  • 1 lemon
    juiced
  •  1 small celeriac
  • 6 tbsp mayonnaise
  • 2 tbsp wholegrain mustard
  • 2 tbsp double cream or crème fraîche
  • 1 tbsp Dijon mustard
  • Parma or Bayonne ham and toast
    to serve

Method

  • step 1

    Tip the lemon juice into a bowl. Top and tail the celeriac, and use a knife to remove the thick skin. Thinly slice, then cut each slice into matchsticks and toss in the lemon juice.
    Mix in the other ingredients and season. You can eat this straight away, but if you leave it for a few hours it will soften and the flavour will mellow. Serve with ham and toast.
