"The Italians have long known that the best way to serve perfect fruit is simply to get out of its way. A bowl of ice and pile of cherries is all you need for the most gorgeous end to a meal. Use the best cherries you can find — king cherries, if you can get them — and let the ice bath do the rest. Something happens when cherries get properly cold. They taste better, crisper, more of themselves. Truly the definition of effortless hosting."
