This simple chocolate mousse is the first in olive talent resident, Alexina Anatole's new video series, "One Good Thing", where she shares a hack that will elevate your entertaining. Follow @olivemagazine to see what secrets she's sharing next.

Alexina says, "This chocolate mousse feels like a magic trick: just dark chocolate and oat milk, whipped up until silky and light. Bonus: it takes all of 15 minutes! The addition of vanilla and coffee serve to round out and deepen the chocolate flavour here, but both are optional. I like to serve these mousses topped with lightly sweetened whipped cream and a few crystals of flaky sea salt.

If making several hours ahead, or the day before, store the mousses in the fridge, and take them out at least 30 minutes before serving."


Simplest chocolate mousse recipe

  • 470ml 'whole' oat milk (e.g. Oatly)
  • 400g 70% dark chocolate (e.g. Menier)
    roughly chopped
  • 2 tsp vanilla extract
  • ¼ tsp espresso powder
  • ice
  • whipped cream
    to serve (optional)
  • flaky sea salt
    to garnish (optional)

Method

  • step 1

    Set a small to medium stainless steel bowl in a large bowl full of ice.

  • step 2

    Add the oat milk, chopped chocolate, vanilla and espresso powder to a saucepan and place over a low heat, whisking until everything is melted and fully homogenous.

  • step 3

    Pour the chocolate mix into the prepared bowl and whip vigorously until the mousse has thickened and lightened in colour, around 2 to 3 minutes (I like to do this by hand for greater control, but you could use an electric hand mixer instead, in which case it will take even less time). Transfer to individual serving coupes or glasses and place aside until ready to serve.
