Check out this quick and easy ceviche recipe. Ecuadorian ceviche is beautifully silky and smooth, and has more a soupy consistency than a Peruvian ceviche. The topping is the real surprise though – salted popcorn. It adds extra seasoning for the fish and a light crunch.
This is a wonderful Ecuadorian-inspired pork dish, roasted in beer and spices, until soft and tender. The meat has a lovely fragrance and zesty pop from lime juice.
