What are preserved lemons?
Preserved lemons are lemons that are packed in brine. Over time they lose their sour astringency but retain a floral lemon flavour with a salty, umami kick. Originating from North Africa and sold in jars whole, halved or quartered, they’re commonly used in soups and tagines as well as pilafs, dressings and sauces.
Where do you buy preserved lemons?
Preserved lemons are available in most bigger supermarkets, but they’re really easy to make at home, too. They will keep for up to a year without refrigeration.
