What are preserved lemons?
Preserved lemons are lemons that are packed in brine. Over time they lose their sour astringency but retain a floral lemon flavour with a salty, umami kick. Originating from North Africa and sold in jars whole, halved or quartered, they’re commonly used in soups and tagines as well as pilafs, dressings and sauces.
