Shredded Thai chicken salad

Spice up a salad with Thai chicken, red chilies and mint. couldn't be easier and is the perfect mid-week meal for two.

Ingredients

  • Thai fish sauce 4 tbsp
  • limes 2, juiced
  • soft brown sugar 1 tbsp
  • red onion 1 small, halved and finely sliced
  • cooked skinless chicken breasts 2, shredded
  • white cabbage ½ small, shredded
  • carrots 2 large, shredded
  • red chillies 2, shredded
  • mint a small bunch, roughly chopped

Method

  • Step 1

    Combine the fish sauce, lime juice and sugar then put in a bowl with the onions. Toss and leave for 10 minutes. Add the rest of the ingredients and mix together.
