Steakhouse-style spinach gratin

This is a different way to eat spinach and a great way to get one of your five-a-day. Make this easy steakhouse-style gratin recipe as a side for a supper with friends.



  • spinach leaves 1kg, washed, stems removed and leaves chopped
  • butter 50g
  • plain flour 4 tbsp
  • double cream 250ml
  • shallots 2, finely chopped
  • cheddar 150g, grated
  • dried breadcrumbs 2 tbsp
  • paprika a large pinch 


  • Step 1

    Heat a very large pan then tip in the spinach with a splash of water. Stir until completely wilted then cool and squeeze out all the excess water (a clean tea towel is good for this).

  • Step 2

    Heat the oven to 190c/fan170c/gas5. Melt the butter in a saucepan, stir in the flour and cook for 2 minutes. Whisk in the cream, then simmer for a couple of minutes until the mixture thickens. Add the shallots, spinach and most of the grated cheddar. Stir in the spinach. Spoon into a large baking dish or 6 individual ones. Mix the breadcrumbs, remaining cheese and paprika then sprinkle it over the top.

  • Step 3

    Bake in a large dish for 40 minutes or until golden, or 25 minutes for the individual ones.
