  • 1kg spinach leaves
    washed, stems removed and leaves chopped
  • 50g butter
  • 4 tbsp plain flour
  • 250ml double cream
  • 2 shallots
    finely chopped
  • 150g cheddar
    grated
  • 2 tbsp dried breadcrumbs
  • a large pinch  paprika

Method

  • step 1

    Heat a very large pan then tip in the spinach with a splash of water. Stir until completely wilted then cool and squeeze out all the excess water (a clean tea towel is good for this).

  • step 2

    Heat the oven to 190c/fan170c/gas5. Melt the butter in a saucepan, stir in the flour and cook for 2 minutes. Whisk in the cream, then simmer for a couple of minutes until the mixture thickens. Add the shallots, spinach and most of the grated cheddar. Stir in the spinach. Spoon into a large baking dish or 6 individual ones. Mix the breadcrumbs, remaining cheese and paprika then sprinkle it over the top.

    Bake in a large dish for 40 minutes or until golden, or 25 minutes for the individual ones.
