Ingredients
- spinach leaves 1kg, washed, stems removed and leaves chopped
- butter 50g
- plain flour 4 tbsp
- double cream 250ml
- shallots 2, finely chopped
- cheddar 150g, grated
- dried breadcrumbs 2 tbsp
- paprika a large pinch
Method

Step 1
Heat a very large pan then tip in the spinach with a splash of water. Stir until completely wilted then cool and squeeze out all the excess water (a clean tea towel is good for this).

Step 2
Heat the oven to 190c/fan170c/gas5. Melt the butter in a saucepan, stir in the flour and cook for 2 minutes. Whisk in the cream, then simmer for a couple of minutes until the mixture thickens. Add the shallots, spinach and most of the grated cheddar. Stir in the spinach. Spoon into a large baking dish or 6 individual ones. Mix the breadcrumbs, remaining cheese and paprika then sprinkle it over the top.

Bake in a large dish for 40 minutes or until golden, or 25 minutes for the individual ones.
