Radish and cucumber salad

This salad uses seasonal British ingredients but gives them an Asian twist. Crunchy cucumber, radish and red onion are dressed with sesame oil, rice vinegar and chilli.

Toss well and leave to sit for 5 minutes. sprinkle with sesame seeds to serve.

Ingredients

  • cucumber 1, peeled and thinly sliced
  • radishes 10, thinly sliced
  • red onion ½, finely chopped and soaked in lemon juice for 10 minutes
  • rice vinegar 60ml
  • olive oil 1½ tbsp
  • sesame oil 2 tsp
  • red chilli 1 small, seeded and finely chopped
  • sesame seeds 2 tsp, toasted

Method

  • Step 1

    Put the cucumber, radish and onion (straining off any excess juice) in a bowl.

  • Step 2

    Whisk the rice vinegar, oils, chilli and some seasoning together and pour it over.

  • Step 3

    Toss well and leave to sit for 5 minutes. sprinkle with sesame seeds to serve.
