
Manchego and fresh fig chutney for crostini

A fantastic quick chutney ready in under half an hour and made from fresh figs, red onion, ginger and spices. Here we are serving it with manchego cheese and rocket on toasted crostini, but it would also be great with any charcuterie. Store in an airtight sterilized jar.

- 1 red onionfinely chopped
- 4 tbsp soft brown sugar
- 1 tsp mustard seeds
- 1 stick cinnamon
- 1 star anise
- a thumb-sized piece gingergrated
- 4 tbsp red wine vinegar
- 4 figscut into wedges
- 12 thin slices French stickdrizzled with olive oil and toasted
- 100g manchegoshaved
- a handful rocket
Method
step 1
Put the onion, sugar, spices, ginger and vinegar in a pan and cook together slowly until the onion is completely softened. Add the fig wedges and cook for another 5-10 minutes until the figs are just starting to break down. To serve, top the crostini with a little manchego, some fig chutney and a couple of rocket sprigs.
