Spicy Peas Recipe

Lightly spiced green peas

Green peas are cooked in ghee and spiced up with cardamom, cinnamon, cloves, ginger and chilli, perfect alongside a fillet of poached salmon



  • ghee or butter 1 tbsp (ghee is a clarified butter available from Indian shops and some supermarkets)
  • bay leaves 2
  • green cardamom pods 3
  • cinnamon 1 stick, broken
  • cloves 3
  • cumin seeds 1 tsp
  • root ginger 1½ tsp, finely grated
  • ground coriander 1 tbsp
  • red chilli powder ¼ tsp
  • golden caster sugar a pinch
  • frozen peas 450g
  • coriander chopped to make a handful


  • Step 1

    Heat the ghee or butter in a non-stick pan. Add the bay leaves and whole spices, cook for 20 seconds then add the ginger and stir for 30 seconds. Add the powdered spices, salt and a splash of water, cook for 40 seconds. Stir in the sugar and peas and sauté for 3-4 minutes or until the peas are cooked and the water has evaporated. Stir in the coriander and serve.
