Lightly spiced green peas

Green peas are cooked in ghee and spiced up with cardamom, cinnamon, cloves, ginger and chilli. These peas packed with flavour are perfect on the side of poached salmon.



  • ghee or butter 1 tbsp (ghee is a clarified butter available from Indian shops and some supermarkets)
  • bay leaves 2
  • green cardamom pods 3
  • cinnamon 1 stick, broken
  • cloves 3
  • cumin seeds 1 tsp
  • root ginger 1½ tsp, finely grated
  • ground coriander 1 tbsp
  • red chilli powder ¼ tsp
  • golden caster sugar a pinch
  • frozen peas 450g
  • coriander chopped to make a handful


  • Step 1

    Heat the ghee or butter in a non-stick pan. Add the bay leaves and whole spices, cook for 20 seconds then add the ginger and stir for 30 seconds. Add the powdered spices, salt and a splash of water, cook for 40 seconds.

    Stir in the sugar and peas and sauté for 3-4 minutes or until the peas are cooked and the water has evaporated. Stir in the coriander and serve.
