  • 2 little gem lettuce, quartered lengthways
  • olive oil
  • 1 gluten-free bread, slice, cubed and toasted
  • 1 tbsp hazelnuts, toasted ad roughly chopped


  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1/2 lemon, juiced
  • 20g parmesan or vegetarian alternative, grated, plus 1 tbsp extra to serve


  • STEP 1

    Heat a griddle pan to a medium-high heat. Lightly brush the Little Gem quarters with olive oil and grill for 3-4 minutes on each cut side until charred.

  • STEP 2

    Whisk the dressing ingredients in a bowl, adding 1 tbsp of water if it’s too thick.

  • STEP 3

    Drizzle over the lettuce and top with croutons, hazelnuts and grated cheese.
