Tortellini in a pea broth

Ingredients
- 500ml chicken or vegetable stock
- 1 × 250g pack tortellini
- 2 handfuls frozen peas, defrosted
- ½ a small bunch basil, shredded
- ½ lemon
- (or vegetarian alternive) to serve (optional) parmesan
Method
- STEP 1
Heat the stock in a pan. Add the tortellini and cook until just tender, adding the peas for the last 2 minutes of cooking. Season then stir in the basil. Spoon into bowls and serve with crusty bread and a sprinkling of parmesan.
