Tortellini in a pea broth

This stylish-looking tortellini in a pea broth only needs one pot, is super quick and delicious as well. It's everything you want from a midweek supper, ready in just 10 minutes.



  • chicken or vegetable stock 500ml
  • tortellini 1 × 250g pack
  • frozen peas 2 handfuls, defrosted
  • basil ½ a small bunch, shredded
  • lemon ½
  • parmesan (or vegetarian alternive) to serve (optional) 


  • Step 1

    Heat the stock in a pan. Add the tortellini and cook until just tender, adding the peas for the last 2 minutes of cooking. Season then stir in the basil. Spoon into bowls and serve with crusty bread and a sprinkling of parmesan.
