  • 1 × 250g pack tortellini
  • 2 handfuls frozen peas
    defrosted
  • ½ a small bunch basil
    shredded
  • ½ lemon
  • (or vegetarian alternive) to serve (optional)  parmesan

Method

  • step 1

    Heat the stock in a pan. Add the tortellini and cook until just tender, adding the peas for the last 2 minutes of cooking. Season then stir in the basil. Spoon into bowls and serve with crusty bread and a sprinkling of parmesan.
