Sausage and butternut squash pasta

  • serves 2
  • A little effort

A lovely and easy after work pasta dish that pairs herby sausages with sweet butternut squash, fresh herbs and linguine to make a substantial meal. The chilli oil is optional but adds a spiciness that cuts the sweetness if you like things hot.

  • sausages 4-6, skins removed and cut into chunks (choose good quality sausages with lots of seasoning)
  • butternut squash 250g, peeled and cut into small cubes
  • onion ½, chopped
  • parsley a small handful, chopped
  • basil a small handful, chopped
  • chilli oil to serve (optional)
  • linguine 200g, cooked

  • Step 1

Fry the onion, butternut squash and sausage pieces together in a little oil for about 10 minutes or until cooked. Toss through the linguine along with the herbs and lots of seasoning. Add chilli oil if you like.
