Ingredients
- green beans 2 handfuls, blanched
- rhubarb 2 sticks, very thinly sliced
- spinach 2 large handfuls
- orange 1, juiced and mixed with olive oil and seasoning to make a dressing
- mozzarella 1 ball, ripped into pieces
- almonds a handful, toasted
Method

Step 1
Toss the rhubarb, beans, almonds and spinach with the dressing and divide between 2 plates. Scatter over the mozzarella.
