Mustardy potato salad

This classic picnic dish is quick and easy to make. This one is made with baby new potatoes and a Dijon mayo mix takes just half an hour from start to finish.

Ingredients

  • baby new potatoes 1 kg, halved if large
  • mayonnaise 4 tbsp
  • Dijon mustard 2 tbsp
  • shallots 4, finely chopped
  • chives a small bunch, finely chopped

Method

  • Step 1

    Boil the potatoes until tender, about 10-15 minutes. Mix together the rest of the ingredients and toss with the potatoes when cool.
