This simple and classic starter is not to be underestimated. The smell of the melon skin alone is enough to put you in holiday mode, and the combination of the ripe juice and good, cured ham brings out the sweet-savoury-salty-sunny best in both.



  • Charentais melon 1, ripe (you could use another orange-fleshed melon such as cantaloupe)
  • prosciutto di parma or bayonne ham 6 slices


  • Step 1

    Halve the melon, scrape out the seeds with a spoon and discard. Cut each melon half into several crescent-shaped slices and arrange on a plate with the ham.
