Parmesan and rosemary swede

This moreish swede side dish is a healthy alternative to chips, and we think they're tastier too! Topped with parmesan and rosemary they are ideal served with fish.



  • swede 1, large
  • parmesan 40g, grated
  • rosemary leaves 1 tbsp, chopped
  • garlic cloves 2, bruised


  • Step 1

    Heat oven to 220c/fan 200c/gas 7. Peel and chop 1 large swede into chips. Toss with 1 tbsp olive oil, 40g of grated parmesan and 1 tbsp of chopped rosemary leaves.

    Season, then arrange in one layer in a shallow roasting tin.

  • Step 2

    Sprinkle over another tbsp of grated parmesan, dot with butter, then add 2 bruised cloves of garlic.

    Roast for 35 minutes, turning halfway through cooking, until crisp and golden.
