Potato, chorizo and kale stew

Fluffy potatoes, spicy chorizo and warm, comforting stew – what more could you want from a quick and easy mid-week meal this winter?



  • onion 1 large, chopped
  • olive oil
  • chorizo 100g piece, sliced
  • chilli flakes a pinch (optional)
  • chicken stock 500ml
  • floury potatoes 2 large (about 400g), peeled and cut into chunks
  • kale 100g, stalks removed and chopped


  • Step 1

    Cook the onion in 2 tbsp olive oil until soft.

  • Step 2

    Add the chorizo and chilli, if using, and fry until crisp.

  • Step 3

    Pour in the chicken stock and bring to a simmer.

  • Step 4

    Add the potatoes and simmer until the potatoes are very tender.

  • Step 5

    Add the kale and cook for 3-4 minutes until soft. Taste and season if needed.
