Leeks with gammon

Gammon and leeks is a classic combination. This easy one pot combines fantastic flavours and is ready in just 30 minutes, perfect for a midweek meal.



  • potato 1, very thinly sliced
  • leeks 1, trimmed and thinly sliced
  • chicken stock fresh, cube or concentrate made up to 300ml
  • coriander seeds 1 tsp
  • gammon 2 steaks or slices
  • Dijon mustard to serve


  • Step 1

    Put the potatoes, leeks, chicken stock and coriander seeds in a wok or frying pan. Season with black pepper. Boil for 5-6 minutes until the vegetables are just tender. 

  • Step 2

    Put the gammon on top of the vegetables and cook for 6 minutes. Finish under the grill and either stir the mustard into the sauce or serve it on the side.
