Ingredients

  • 1 potato, very thinly sliced
  • 1 leeks, trimmed and thinly sliced
  • fresh chicken stock, cube or concentrate made up to 300ml
  • 1 tsp coriander seeds
  • 2 steaks or slices gammon
  • to serve Dijon mustard

Method

  • STEP 1

    Put the potatoes, leeks, chicken stock and coriander seeds in a wok or frying pan. Season with black pepper. Boil for 5-6 minutes until the vegetables are just tender.

  • STEP 2

    Put the gammon on top of the vegetables and cook for 6 minutes. Finish under the grill and either stir the mustard into the sauce or serve it on the side.
