Ingredients
- sirloin steak 200g, trimmed of all fat
- olive oil
- red onion ½, sliced
- chicory 1, chopped
- cooked beetroot 100g, cut into wedges
- greens (kale, chopped
- balsamic vinegar 1 tbsp
- thyme leaves chopped to make 1 tsp

Step 1
Heat a frying pan until it’s very hot. Rub the steak with 1 tsp oil and season. Sear on both sides for 2 minutes for rare, or longer if you like, then leave to rest under foil.

In the same pan, turn the heat down to medium, add the red onion and fry for 5 minutes until soft, then add the chicory, beetroot, and greens. Fry for 4 minutes, season, then add the balsamic and thyme. Simmer for a minute, until the balsamic coats the veg and the chicory is tender. Tip onto a plate and top with the steak.
