Ingredients
- mascarpone 4 tbsp
- milk 3-4 tbsp
- tarragon chopped to make 1 tbsp
- parsley chopped to make 4 tbsp
- Dijon mustard 1 heaped tsp
- cooked ham 4 thick-cut slices
- baby new potatoes cooked to serve
- watercress to serve

Step 1
Melt the mascarpone and milk together in a small pan until you have a smooth mixture, then stir in the herbs, mustard and plenty of seasoning. Arrange the ham on two hot plates, spoon over the sauce and serve with the potatoes and watercress.
