Grilled chicken with yoghurt and bulgar wheat salad

The easy marinade for this chicken ensures making a delicious meal midweek is quick and easy. Try using lamb steaks instead of chicken and stirring some chopped mint through the bulgar wheat.



  • natural yoghurt 5 tbsp
  • garlic 1 clove, crushed
  • cumin seeds 1 tsp
  • lemon 1, juiced
  • boneless skinless chicken thighs 4 large
  • bulgar wheat 100g
  • chicken stock fresh, hot
  • chives or parsley or coriander a handful of one or a mixture, roughly chopped


  • Step 1

    Mix together the yoghurt, garlic, cumin and 1 tbsp lemon juice. Pour over the chicken and leave to marinate for 10 minutes. Meanwhile, put the bulgar wheat in a bowl and cover with the stock. Leave for 10 minutes to soften and absorb the liquid. Drain off any excess.

  • Step 2

    Lift the chicken out of the marinade and grill under a medium heat turning once until cooked through, about 8-10 minutes. Stir the herbs through the bulgar wheat with the remaining lemon juice and serve with the chicken.
