
Chorizo, manchego and pepper pan toasties

Ingredients
- 4 slices sourdough
- 2 tbsp chilli jam
- 100g manchego, grated
- 8 slices sliced chorizo
- 2 roasted red peppers, sliced
- butter, for spreading
- dressed rocket, to serve
Method
- STEP 1
Spread the bread with chilli jam on one side of each slice then sprinkle the cheese over the tops. Add chorizo and peppers to two of the slices and flip the other slices on top. Butter the outsides of the sandwiches. Heat a non-stick frying pan until hot, then fry the sandwiches until crisp and golden on both sides. Cut in half and serve with the rocket salad.
