Prawn salad with lime and honey dressing

This delicious prawn and mango salad is full of flavour, with a lime and honey dressing combining the sourness of lime with the sweetness of honey. The toasted coconut makes a terrific crunchy topping and the salad can be served as part of an Asian meal or summer buffet.



  • dessicated coconut 20g
  • spinach leaves 150g
  • large cooked prawns 150g
  • red onion 1 small, diced
  • mango 1 large, peeled and cubed
  • coriander to garnish
  • red chilli 1/2, to garnish
  • lime juice 3 tbsp
  • honey 1 tbsp
  • mustard 1 tsp
  • sunflower oil 5 tbsp


  • Step 1

    Dry fry the coconut over a medium heat until lightly toasted. Whisk the dressing ingredients together and season.

  • Step 2

    Arrange the spinach, prawns, red onion and mango in a large salad bowl. Sprinkle with the coconut, chilli and coriander and pour the dressing over just before serving.
