Parmesan-crusted salmon

This quick and easy dinner for two is the perfect recipe to fall back on midweek when you're short of time and energy. It's a great way to pep-up salmon filets.



  • breadcrumbs 50g
  • basil a handful, chopped
  • parmesan grated to make 2 tbsp 
  • olive oil
  • salmon fillets  2
  • salad to serve


  • Step 1

    Heat the oven to 220C/fan 200C/gas 7. Mix the breadcrumbs, basil, parmesan and 1 tbsp olive oil and season. Cover 2 salmon fillets in the mix. Bake for 10 minutes and serve with salad.
