Blue Angel’s oysters with hot ice

A brilliant way to start a summer dinner party, these look cheffy but are very easy to make. blueangelrestaurant.com.au.



  • caster sugar 500g
  • limes 3, zested and juiced
  • grapefruit 2½, juiced
  • jalapeno chillies or fat green chillies finely chopped
  • tequila 100ml
  • oysters 12


  • Step 1

    Gradually dissolve the sugar in 500ml water over a low heat. Add the lime juice and zest, grapefruit juice, chillies and tequila. Pour into a container and freeze. Every 30 minutes, rough up with a fork to form crystals until you have a frozen mixture. Serve on freshly shucked oysters.
