Chargrilled new potato salad

This is a fantastic twist on a classic potato salad with sunkissed tomatoes, zesty lemon and a chilli kick is perfect for a summer BBQ. Eat it with grilled meat or fish.

Ingredients

  • new potatoes 1.5kg
  • flat leaf parsley small bunch, chopped
  • chives chopped to make 2 tbsp
  • unwaxed lemon 1, zested
  • spring onions 1 bunch, trimmed and sliced
  • SunBlush or sunkissed tomatoes 200g, roughly chopped
  • red chilli 1, deseeded and finely chopped
  • white wine vinegar 2 tbsp

Method

  • Step 1

    Cook the potatoes in boiling, salted water until tender. Drain and cut in half.

  • Step 2

    Heat a ridged griddle pan. Toss the potatoes in 3 tbsp olive oil and cook cut side down on the griddle pan. Tip into a large bowl, add the herbs, lemon zest, spring onions, tomatoes and chilli.

  • Step 3

    Whisk together the vinegar and 6 tbsp olive oil to make the dressing. Pour over the potatoes, season with salt and freshly ground black pepper and mix well.
