Ingredients

  • 1 (about 200g) sirloin steak, fat trimmed
  • 1 tsp ground cumin
  • a large pinch smoked paprika
  • 1 lime, juiced
  • 1 small red pepper, sliced into strips
  • 1 small yellow pepper, sliced into strips
  • 1 onion, halved and thinly sliced
  • 2 tsp olive oil
  • 10 baby plum tomatoes, halved
  • ½ a small bunch coriander, roughly chopped
  • 4 small corn tortillas, warmed

CORIANDER YOGURT SAUCE

  • 100ml low-fat natural yogurt
  • ½ clove garlic, crushed
  • 1 green chilli, chopped
  • ½ a small bunch coriander, roughly chopped

Method

  • STEP 1

    Put the steak in a plastic food bag then bash a few times with a rolling pin to flatten it a little. Open the bag and sprinkle over the cumin, paprika and lime juice, and season well. Smoosh everything together and leave to marinate while you make the other fillings.

  • STEP 2

    Whizz together the yogurt, garlic, chilli and coriander in a small blender until just smooth.

  • STEP 3

    Put the peppers, onion and olive oil in a bowl, and toss with seasoning. Heat a non-stick frying pan until hot then tip in the pepper mix and fry until softened and golden at the edges.

  • STEP 4

    Heat a griddle to really hot then sear the steak for 2 minutes on each side. Put on a plate to rest for 5 minutes, then slice.

  • STEP 5

    Add the tomatoes to the pepper pan and give it another blast of heat until the tomatoes soften. Toss in the steak and coriander. Serve in the tortillas with a spoonful of the sauce.
