Origins of the Very Dirty Kalimera Martini

This recipe was created by our friend and incredibly talented bartender Sotiris Sakkas, and was born from the idea of making a drink with the Kalamata olives from Télémaque’s family olive grove in Laconia, Greece. We emphasise the Greek flavours by infusing roasted Florina pepper and thyme into the drink. This recipe comes from Crouch End restaurant, Kalimera

Ingredients

  • 1 slice roasted Florina pepper or roasted red pepper
  • pitted and sliced to make 1 tsp kalamata olives, plus 2 whole stone-in olives
  • 2 sprigs thyme
  • 50ml vodka
  • 25ml Lillet Blanc

Method

  • STEP 1

    Put the pepper, olives and one sprig of thyme in a shaker, muddle the ingredients and add the vodka and Lillet Blanc. Shake, then fill the shaker with ice and shake vigorously twice, then fine strain and pour into a martini glass.

  • STEP 2

    Put the whole Kalamata olives on a cocktail stick and use to garnish the drink along with the remaining sprig of thyme.
