What is caviar?
Caviar is a luxury food item consisting of salt-cured roe from fish, traditionally from wild sturgeon. The term caviar now extends to the roe from other fish, including salmon, trout and carp. Caviar is considered a delicacy and is eaten as a garnish or spread. The value of caviar is determined by its texture and flavour: a firm texture and creamy, buttery taste with a mild fish finish is prized highly. The value also depends on how the caviar was taken from the fish – by massage (higher value), or by killing it.
