Chefs Dan Doherty of high-rise City restaurant Duck and Waffle and Damian Clisby, of Petersham Nurseries, have collaborated on what will be the lunch of the year, on Monday 13 July. Duck and Waffle will be transformed into an urban oasis in the sky by Petersham’s head of horticulture Thomas Broom. The 40th floor restaurant will be filled with an abundance of edible plants, flowers and foliage.
olive contributor Dan and Damian have created a menu that reflects their shared respect for the seasons and commitment to culinary magic. Dan Doherty explains, “At Duck & Waffle, we stay 100% connected to our ingredients – it’s something that is very close to our hearts. Petersham Nurseries is completely immersed in nature. Combining the two worlds was very interesting to us all, and turning the UK’s highest restaurant into a soaring garden in the sky is an exciting prospect.” Damian adds: “The menu we are presenting reflects this, pairing natural, seasonal food with fresh, delicate flavours.”
A portion of the proceeds will benefit Action Against Hunger, an international humanitarian organisation with the mission of eradicating world hunger, and Bee Kind & Dine, a local organisation that promotes sustainable eating and awareness for the plight of the British bee. Petersham Garden Salad
Beets, crisp polenta & pecorino sardo canestrato
Petersham nasturtiums, radishes, lemon, chilli & Zisola olive oil
Lavender & Honey Roasted Duck Breast
Borlotti beans & gem lettuce
Strawberries & Cream Waffle
